Ingredients:
1 can albacore tuna
8 oz zucchini
1 T minced garlic
1 T apple cider vinegar
2 T dijon mustard
1/2 t onion powder
1 t italian seasoning
1/2 t thyme
pink salt and pepper, to taste
Directions:
- Heat vinegar in skillet over medium heat and add undrained tuna and garlic
- Use a potato peeler to cut zucchini into strips then cut into thirds
- Stir zucchini into skillet and place lid on top for 3-5 minutes
- Remove lid and stir in mustard, onion powder, italian seasoning, and thyme
- Place lid on top again and cook until zucchini is tender
- Drain liquid then season with pink salt and pepper
