Ingredients
1 medium zucchini, finely shredded (about 2 cups)
1 egg
1/3 c egg whites
2 T coconut flour
1/2 t baking powder
1/2-1 t italian seasoning
1/8 t garlic powder
1/8 t pink salt
Directions
- Preheat oven to 450 degrees
- Line baking sheet or pizza pan/stone with parchment paper
- Steam zucchini on stovetop for a 2-3 minutes or microwave for 1 minute
- Wring as much moisture as possible out of zucchini with tea towel
- In medium bowl, whisk together egg, egg whites, baking powder, and spices
- Stir in zucchini and coconut flour
- Spoon mixture onto baking sheet and flatten evenly into circle or rectangle about 1/4 inch thick
- Bake about 10-12 minutes, until starting to brown
- Remove from oven to add sauce, cheese, and desired toppings then baking another few minutes until cheese is melted
