Ingredients

1 c grape tomatoes
1/2 red bell pepper,chopped
1 green pepper, chopped
1/2 c onion, chopped 
2 c romaine lettuce
4 oz lean ground beef
2 T nutritional yeast
1/4 c plain greek yogurt
1/4 c + 2 T salsa
1-2 t Taco Seasoning

Directions
  1. Cook ground beef in skillet over med-high heat until beginning to brown
  2. Add in onion, peppers, and taco seasoning
  3. Cover and cook until veggies begin to soften
  4. Stir in 1/4 c salsa and tomatoes, cover, and cook another couple minutes
  5. Transfer mixture to large bowl with lettuce and toss 
  6. Sprinkle with nutritional yeast
  7. Top with yogurt and remaining salsa
