Ingredients:
3/4 c pumpkin
1 egg
2 droppers Sweet Leaf English Toffee stevia
1/2 t allspice
1/4 t pepper
1/4 t thyme
1 t baking powder
2 T coconut flour
1 T cashews
1 T almonds
pink salt
Directions:
- Preheat oven to 350 degrees
- Line baking sheet with parchment paper or silicone baking mat
- Combine pumpkin, egg, stevia, allspice, pepper, thyme, and baking powder together in bowl with whisk or in food processor
- Stir in coconut flour and allow to thicken for a couple minutes
- Fold in cashews and almonds
- Spoon 12 mounds (about 1 heaping tablespoon each) onto baking sheet
- Press each mound into a flat circle
- Sprinkle lightly with pink salt
- Bake for 15 minutes or until starting to brown slightly
- Remove from oven and allow to cool
- Store in paper bag
