Sweet 'n Spicy Pumpkin Cookies

Ingredients:

3/4 c pumpkin
1 egg
2 droppers Sweet Leaf English Toffee stevia
1/2 t allspice
1/4 t pepper
1/4 t thyme
1 t baking powder
2 T coconut flour
1 T cashews
1 T almonds  
pink salt 

Directions:

  1. Preheat oven to 350 degrees
  2. Line baking sheet with parchment paper or silicone baking mat
  3. Combine pumpkin, egg, stevia, allspice, pepper, thyme, and baking powder together in bowl with whisk or in food processor
  4. Stir in coconut flour and allow to thicken for a couple minutes
  5. Fold in cashews and almonds
  6. Spoon 12 mounds (about 1 heaping tablespoon each) onto baking sheet
  7. Press each mound into a flat circle
  8. Sprinkle lightly with pink salt
  9. Bake for 15 minutes or until starting to brown slightly
  10. Remove from oven and allow to cool
  11. Store in paper bag
