1 avocado
1 egg
2 t cheddar cheese, shredded (or other cheese of choice)
pink salt and pepper, to taste
Directions
Preheat oven to 425
Slice avocado in half
Shave off bottom part of avocado, as needed, to make it lie flat on baking sheet
Sprinkle pink salt and pepper onto avocado
Beat egg then pour evenly into avocado halves
Top each half with 1 teaspoon cheese
Bake 16-18 minutes, until egg has set
