Ingredients:
4 bell peppers
8 oz ground chicken
1 c cottage cheese
1/2 c chopped tomatoes
1 c baby spinach
spices of choice, to taste
Directions:
- Preheat oven to 350 degrees
- Cook chicken with spices in skillet then transfer to bowl
- Slice tops off of peppers and place in to baking pan
- Chop tops and add to bowl with chicken
- Stir in spinach, tomoatoes, and cottage cheese
- Spoon mixture into each pepper
- Bake for 30-45 minutes
(Alternatively, you can hollow out and stuff tomatoes instead of peppers)
