Ingredients:
1 small head cauliflower
4 oz spinach
1/2 c mozzarella cheese
Pink salt and pepper, to taste
12 eggs
Directions:
- Preheat oven to 400 degrees
- Boil cauliflower until just about soft, drain
- In a food processor blend cauliflower, spinach and mozzarella cheese
- Place about 1/4 to 1/3 cup mixture in a cupcake tin
- Press mixture up the sides of cupcake tin to form a cup
- Bake about 30 minutes
- At this point, “cups” can be cooled and frozen for later use, if desired (21 calories per “cup”)
- Turn oven down to 350 degrees
- Crack an egg in center of each cup
- Bake for 20 minutes or until egg is desired consistency
