Rainbow Citrus Slaw

Ingredients:

8 carrots, shredded
1 zucchini, shredded
6 stalks celery, shredded
1/4 c chopped red onion (optional)
4 T parsley
1 t celery seed
1 c avocado
1/4 c lime juice
1 T olive oil
1 T apple cider vinegar
1 c plain kefir
1/2 t pink salt
1/4 t pepper
1/4 t liquid stevia

Directions:

  1. Combine carrots, zucchini, celery, parsley, celery seed, and onion (if desired) in a medium mixing bowl
  2. Place avocado, lime juice, olive oil, vinegar, kefir, salt, pepper, and stevia in blender or Magic Bullet and pulse until dressing is smooth and creamy
  3. Pour dressing over slaw and stir 
  4. Cover and place in fridge until ready to eat
