Ingredients:
1 c. canned pumpkin
5 eggs
1/4 c. coconut oil, melted
1/4 c. coconut flour
½ c. almond flour
2 scoops whey protein powder
1 tsp. nutmeg
2 tsp. thyme
½ tsp. pink salt
2 tsp. baking powder
Directions:
- Preheat oven to 350 degrees.
- Grease loaf pan.
- Place coconut oil, eggs, and pumpkin in blender and blend until combined.
- Add baking powder, nutmeg, thyme, and pink salt.
- Pulse in almond flour, protein powder, and coconut flour.
- Transfer batter into loaf pan.
- Bake for 50 minutes.
- Remove from oven and allow to cool before slicing.
