Ingredients
2 eggs
1 c. pumpkin puree
3 dropperfuls vanilla or plain liquid stevia (or more, to taste)
1 1/2 c. Vanilla Nut Paleo Protein Powder (or other protein powder of choice)
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. pink salt
Directions
- Preheat oven to 350 degrees.
- Line muffin tins with liners.
- Whisk together eggs, pumpkin, and stevia.
- Add in all dry ingredients.
- Pour batter evenly into 12 muffin tins.
- Bake 25-30 minutes.
- Remove from oven and allow to cool for 10 minutes.
