Ingredients

1 1/2 c almond flour
1/4 c coconut flour
1 1/2 t baking powder
1 1/2 t baking soda
1/2 t pink salt
1 1/2 t pumpkin pie spice
1 c pumpkin puree
1/2 c unsweetened applesauce
1/3 c water
1 t lemon juice
3 T coconut oil, melted
2 eggs
1 t vanilla

Directions
  1. Preheat oven to 350 degrees
  2. Grease 9x4 loaf pan
  3. Whisk together almond flour, coconut flour, baking soda, baking powder, salt, and pumpkin pie spice in large bowl
  4. In another bowl, whisk together pumpkin puree, lemon juice, applesauce, water, coconut oil, eggs, and vanilla
  5. Slowly add flour mixture to pumpkin mixture and stir until blended
  6. Pour batter into loaf pan and bake 50-60 minutes, or until cooked through and toothpick inserted in center comes out clean
