Ooey Gooey Chocolate Chip Cookie Pie
1 (15 oz) can chickpeas (drained and rinsed)
½ c. quick oats
½ c. IMO fiber [or honey (+30 cal/serving)]
2 dropperfuls stevia
½ tsp. pink salt
1 tsp. baking powder
¼ tsp. baking soda
1/4 c. unsweetened applesauce
1/3 c. unsweetened almond milk
1 1/2 T. coconut oil
2 tsp. vanilla extract
½ c. Enjoy Life chocolate chips
- Preheat oven to 350 degrees.
- Grease 8 inch round pan.
- Combine all ingredients (except chocolate chips) in food processor until smooth.
- Stir in chocolate chips.
- Pour batter into pan.
- Bake 30 minutes (or longer if you want a less gooey cookie).
- Allow to cool 15 minutes before cutting.
