Ingredients
1 c Trader Joe's Super Seed & Ancient Grain Blend (or 1/4 c each buckwheat groats, chia seeds, flax seeds, quinoa)
1/2 c peanuts (or other nut of choice)
1/2 c shredded unsweetened coconut
3/4 c almond flour
1 t vanilla
1/4 c honey
1/4 c coconut oil
2 T unsweetened cocoa powder
1/2 c egg white protein powder (or other protein powder of choice)
1 T water
Directions
- Preheat oven to 350 degrees
- Grease 8x12 baking pan
- Grind super seeds/ancient grains, peanuts, and coconut in food processor until coarse flour consistency is reached
- Add almond meal, protein powder, cocoa powder, vanilla, honey, and coconut oil and process until well mixed
- Add water (more or less, as needed)
- Transfer mixture into pan and press down to spread until it is even and spreads to all corners of baking pan
- Bake for about 15-20 minutes
- Remove from oven and cut into 12 bars
- Let cool completely before removing from pan
