Ingredients:
1/4 c almond flour
1/8 t baking soda + 1/2 t vinegar (or 1/2 t baking powder)
1 T melted coconut oil
1 egg, lightly beaten
1 T lemon juice
6 drops plain stevia
3-5 drops vanilla creme stevia (or lemon drop if you want more tang)
1/2 T chia seeds
Directions:
- Combine all ingredients in a mug (or in bowl and transfer to muffin tin)
- Microwave for 1 minute 30 seconds (or bake at 375 degrees for 10 minutes or until toothpick comes out clean)
