Ingredients

1/2 cup coconut oil
3/4 cup canned coconut milk, full fat
3/4 cup shredded unsweetened coconut, divided
1 tsp vanilla extract
1 tsp pumpkin pie spice
3 dropperfuls stevia

Directions
  1. In double broiler, combine coconut oil, coconut milk, vanilla, pumpkin pie spice, and stevia
  2. Heat until melted and mixed together
  3. Stir in 1/4 c shredded coconut
  4. Place mixture in refrigerator for about 30 minutes (until moldable, but not solid)
  5. Spoon out mixture by heaping tablespoon at a time
  6. Roll into balls
  7. Roll ball in remaining 1/2 c shredded coconut to coat 
  8. Place in refrigerator or freezer until hardened and for storage
