Coconut Oatmeal Chocolate Chip Cookies

Ingredients:

1 c. shredded unsweetened coconut
1/2 c. oats
2 bananas
1 T. unsweetened cocoa powder (optional)
2 T. Enjoy Life chocolate chips

Directions:

  1. Preheat oven to 350 degrees.
  2. ​Line baking sheet with parchment paper.
  3. Pulse coconut, oats, and cocoa powder (if desired) in food processor until finely ground.
  4. Add bananas and pulse to a paste.
  5. Form dough into 12 mounds and flatten into cookie shape on baking sheet.
  6. Bake 20 minutes.
  7. Allow to cool on a cooling baking sheet.
