Ingredients:
4 T egg whites
1 egg
1/4 c unsweetened almond milk
1/8 t baking soda + 1/2 t vinegar (or 1/2 t baking powder)
1/4 t cinnamon
1/2 t vanilla, if desired
2 T flax meal
2 T coconut flour
Directions:
- Heat skillet to med-high
- Whisk eggs and almond milk in liquid measuring cup with pour spout until well combined
- Stir in baking soda/vinegar (or baking powder), cinnamon, and vanilla, if desired
- Stir in coconut flour annd flax meal
- Lightly grease skillet
- Pour pancake sized amount of batter into skillet
- Allow to cook on one side until fluffy and bubbly in center
- Flip and cook on other side
*These are AWESOME served with Coconut Butter spread on top and Mock Pancake Syrup!
