Ingredients
1 c. egg whites
1/2 tsp. cinnamon
6 packets stevia
1/8 tsp. xanthan gum, optional
Directions
- Preheat oven to 350 degrees and line baking sheet with parchment paper
- Pour egg whites into bowl and mix with hand mixer until eggs for stiff peaks (Be patient with this b/c it's the most important step!)
- Gently stir in cinnamon, stevia, and xanthan gum (if desired, to help puffs keep their shape when baking)
- Spoon by the tablespoon onto baking sheet
- Bake for 12 minutes, or until golden on top
- Sprinkle with additional cinnamon, if desired
