Ingredients
8 oz buffalo
9 oz baby spinach
8 oz mushrooms, quartered
1 green pepper, cut into bite-sized pieces
1/2 c cottage cheese
1 t onion flakes
1/4 c Simple Girl Carolina Style BBQ Sauce
1 T minced garlic
1/2 t xanthan gum
Directions
- Cook garlic and buffalo in skillet over med-high heat
- Drain liquid then return to stovetop
- Stir in onion flakes, green pepper, mushrooms, and spinachÂ
- Cover and cook until veggies soften
- Stir in BBQ sauce and cottage cheese
- Push veggies to edges of skillet and stir xanthan gum into liquid to thicken sauce
- Remove from heat and stir veggies into sauce
