Ingredients
1 serving Buffalo Sauce
1 c cooked, chopped chicken breast
3 c spring mix or lettuce
1/2 red bell pepper, chopped
1 mini english cucumber, chopped
12 grape tomatoes, cut in half
2 T red onion, chopped
5 spanish green olives, sliced thin
1/4 c Trader Joes Organic Broccoli Slaw mix
1 oz feta cheese crumbles
1/4 c plain kefir
1/2-1 t Ranch Seasoning
1/4 t xanthan gum
stevia, if desired
Directions
- Mix kefir, Ranch Seasoning, xanthan gum, and stevia (if desired) in small bowl and place in refrigerator
- Pour Buffalo Sauce over chicken in separate small bowl, mixing until well coated
- Place all veggies in container/bowl
- Pour dressing over veggies, place lid on top, and shake until coated
- Transfer salad to bowl/plate
- Top with chicken and feta crumbles
