Buffalo Apple Burgers with Garlic Cabbage Rice

Ingredients:

3.5 oz ground buffalo/bison
1 apple, finely chopped
1/4 t onion powder
1/4 t garlic powder
1/2 t Bragg’s liquid aminos
8 oz cabbage (red or green), finely chopped
1 T minced garlic
1/8 c water
salt and pepper, to taste

Directions:

  1. Preheat oven to 350 degrees and line baking sheet with foil or parchment paper
  2. Mix buffalo, apple, onion powder, garlic powder, and liquid aminos in bowl using hands until well combined
  3. Divide mixture into 2 equal mounds and flatten into burgers (could make meatballs or meatloaf instead)
  4. Place on baking sheet and bake for 15 minutes
  5. Heat water in skillet over med-high heat
  6. Saute garlic for a minute
  7. Stir in cabbage and saute until tender
  8. Add salt and pepper to taste
  9. Serve burgers on top of cabbage rice
