Ingredients

3 oz lean ground beef
1/4 c chopped red onion
1/3 c chopped green pepper
3 eggs
3 T blue cheese crumbles
1/2 T coconut oil
pink salt, to taste

Directions
  1. Brown meat in skillet with peppers and onions over med-high heat
  2. Drain and cover to keep warm
  3. Melt coconut oil in separate skillet
  4. Whisk eggs then pour into skillet
  5. Cover with lid and cook until bubbly
  6. Pour meat mixture onto eggs
  7. Sprinkle on  blue cheese crumbles evenly
  8. Fold in half with spatula
  9. Place lid on skillet and cook a little longer
  10. Transfer to plate
