Apple Pie Protein Cookies

Ingredients:

20 pitted dates
1/4 c cashews
1/4 c almonds
1 T prebiotic fiber (FiberYum IMO syrup)
1/4 c water
1 bag (34 g) freeze dried apples
1/2 t cinnamon
1 c egg white protein powder (or other protein powder of choice)
1/4 c almond flour +1/2 t cinnamon (combined in small bowl)

Directions:

  1. Preheat oven to 350 degrees
  2. Combine dates, cashews, almonds in food processor until well broken down
  3. Add in apples, cinnamon, prebiotic fiber, and protein powder
  4. Slowly add in water, up to 1/4 c, until mixture comes together
  5. Divide mixture into 12 balls
  6. Roll each ball in cinnamon almond flour
  7. Place onto parchment lined baking sheet and flatten into circle about 1/4 inch thick
  8. Bake for 10 minutes then flip cookies and bake 5 more minutes
