Loaf ingredients:
1/2 cup coconut flour, sifted
1/3 cup almond flour
1/3 cup coconut sugar
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
3 eggs
1/3 cup unsweetened applesauce
1/2 cup unsweetened almond milk
2 Tbsp melted butter
1/2 tsp vanilla
1 medium apple thinly sliced
Crumble Topping Ingredients:
2 Tbsp ground Pecans
2 Tbsp coconut sugar
2 Tbsp unsweetened coconut flakes
2 Tbsp butter
Directions:
- Preheat oven to 375 degrees
- Grease a loaf pan
- Mix eggs applesauce, almond milk, melted butter, and vanilla together in a bowl
- Mix coconut flour, almond flour, coconut sugar, cinnamon, baking powder, and baking soda together in a separate bowl
- Mix wet into dry ingredients
- Pour into loaf pan
- Arrange sliced apples on top
- Combine all crumble ingredients and sprinkle on top of apples
- Bake for 40 minutes
