Ingredients

1 can (full fat) coconut milk 
½ c riced cauliflower (chopped fine in food processor)
½ c shredded, unsweetened coconut
2 c apple, grated or finely chopped
1 t vanilla extract
½ t cinnamon
stevia, to taste

Directions
  1. Mix coconut milk, cauliflower, apple, vanilla, and cinnamon in saucepan over med-high heat
  2. Reduce heat, cover, and simmer for 15-20 minutes
  3. Serve warm or refrigerate and serve cold
