I was at work today when someone told me it was National Peanut Butter Lover’s Day. WHAT?! I never knew there was such a thing! Immediately, I determined that I would need to include some of the creamy deliciousness into my day. Lunch was already at work with me, so I started brainstorming dinner ideas that I could make with peanut butter. I was thinking something along the lines of a chicken dish using chunky peanut butter and liquid aminos to make a sauce or a salad with a Thai peanut dressing, but I ended up going a totally different route….

Since I got home a little later than usual and deemed playing some wiffle ball with my kiddo and husband a higher priority than making dinner, I quickly sliced up a cucumber, sprinkled it with some Simple Girl BBQ Seasoning and inhaled it before heading downstairs for some ball. Afterward, I didn’t want to spend a lot of time getting food ready, so I opted to make something that I could whip up quickly and decided to do healthy dessert for dinner.

In my opinion, you can’t really go wrong with a combo of chocolate and peanut butter, so I made Chocolate Nice Cream and added peanut butter. Since I was having this as my dinner, I figured I should add in some protein and healthy fat as well. One scoop of unflavored whey protein added a whopping 24 grams of protein and the Coconut Oil Chocolate Chunks are a great source of medium-chain fatty acids. This recipe turned out so incredibly decadent that I felt almost guilty eating it for dinner, but then I remembered that it was about 500 calories of healthy, satiating ingredients without any added sugar and didn’t have anything to feel guilty about!
