You’re probably looking at the picture above and thinking, “That lady is a crazy….she posted a picture of a bagel, not a vegetable”. It would appear that way (and, indeed, I may be a little crazy), but that bagel is actually a Cauliflower Bagel! So the cat’s out of the bag as to what my new favorite veggie is: CAULIFLOWER.
I have come to realize that cauliflower is probably the most versitile vegetable of the garden. If I wanted to, I could easily find a way to incorporate it into every meal of my day, including snacks and desserts! Here are some of the many recipes I’ve come across that use cauliflower in ways I would have never even dreamed of: Cauliflower Alfredo Sauce, Cauliflower Buffalo Bites, Cauliflower N’Oatmeal, Cauliflower Breadsticks with Marinara, Steamed Cauliflower Rice, Cauliflower Tots, Cauliflower Tortillas, Mashed Cauliflower, Ranch Cauliflower Chips, Nutty Cauliflower Brownies, Dairy-free Cauliflower Pizza Crust…and I could go on and on.
An entire medium head of cauliflower touts a mere 146 calories, is high in potassium, low in sodium and natural sugars, has 12 g of fiber, 11 g of protein, and can easily be described as a superfood! Cauliflower contains sulforaphane, a sulfur compound that has also been shown to kill cancer stem cells and significantly improve blood pressure and kidney function. Along with containing an array of essential vitamins and minerals, cauliflower contains anti-inflammatory nutrients that help lower inflammation in the body.
With all these excellent properties, cauliflower is truly a perfect addition to sneak into as many recipes as possible. I’m willing to bet that, most times, your families and friends won’t even know they’re eating a veggie!
